Quick summary: AEO | GEO for restaurants is the work of getting your place named when someone asks an AI tool where to eat, and making sure the hours, menu and booking details it repeats are right. AI tools build those answers from review sites, booking platforms, local media and your own website. A restaurant whose details match across all of them is easier to name. The map pack still decides most meals, so this comes second for most places.
People ask AI tools the questions they used to ask a friend who knows the town. The questions are long, and they pack several conditions into one sentence.
Questions 1 to 7 ask for a recommendation. Questions 8 to 10 are about one restaurant, often yours. For those, the tool repeats whatever it can find about you, right or wrong.
Each AI tool reads different sources, which is why their answers differ.
We do not have citation-share numbers for restaurants and will not invent any. What we have is our own small test. In the State College AI search study, Galli Local asked 10 local questions of ChatGPT, Gemini, Google AI Overviews and Microsoft Copilot Search on October 5, 2026. The tools named 83 businesses in total. Of 88 question-and-business pairings, 52 were named by only one tool, and 5 were named by all four. For the coffee shop question, the cited sources were local and student media and Reddit. For the graduation dinner question, Tripadvisor was cited.
That spread is the main lesson for a restaurant. No single listing or review site covers every tool, so every place you are listed has to say the same thing.

The map pack, for most restaurants. Steven Galli's view is that the map pack and standard results still win buying searches, and AI answers lead question searches. For a restaurant, "buying" means hungry now: "pizza near me", "coffee open now". Those end on the map, and the work for them is on the local SEO for restaurants page.
AI answers matter more as the meal gets more planned. Visitors choosing where to eat on a trip, families booking an occasion and offices ordering catering all ask longer questions. If that describes a real share of your revenue, AEO | GEO is worth adding after the map is in order.

It most likely read an outdated listing. Delivery apps, old review site pages and duplicate profiles often keep hours you changed long ago, and a tool has no way to tell which one is current.
Your Google Business Profile, Yelp, Tripadvisor, your booking platform, delivery apps, local media and Reddit all feed these answers. Different tools favor different sources, so consistency across all of them matters more than any one.
Usually not at first. A coffee shop wins on the map, and a clean set of listings covers most of what AI tools need. It becomes worth it if you depend on visitors or sell catering.
